Chicken Rellenos and Some Spargus'



Man oh man do i miss the days of the fried chili rellenos from Chuy's.  The old number 2.  Choose 2 different Rellenos and 2 different sauces.  Shrimp is extra.  Here is my little twist on the same dish.  I start with Anaheim peppers, like the old Chuy's did.  I carve them out, they are a mild pepper on their hottest day.  I stuffed it with chicken.  The chicken was an HEB full chicken that was cage free, allegedly, and had no hormones, allegedly...


  

I then take the stuffed peppers and add a little organic cheese...allegedly...



 I take the asparagus and coat them with a bit of olive oil...

 



I then take the spargus' and toss them in a container of almond meal, salt, chili pepper and black pepper...



 It is starting to look interesting around here...




 Coated the Anaheim peppers with the same oil and almond meal mix...


 Put the peppers on top of the spargus so the cheese and oil will drip onto the greens and bake for about 20 minutes at 350 degrees.

Delicious...dish...
